Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until soft. Add ground beef and cook until browned. Add tomato sauce, herbs, and seasonings. Simmer for 30 minutes.
Melt butter in a saucepan over medium heat. Add flour and whisk until smooth. Gradually add milk while whisking constantly. Cook until thickened. Season with salt, pepper, and nutmeg.
Spread a thin layer of meat sauce in a baking dish. Place lasagna sheets on top. Add more meat sauce, béchamel, and cheese. Repeat layers until all ingredients are used, ending with cheese on top.
I substituted the beef with plant-based meat and it turned out great! The béchamel sauce was a bit tricky but the detailed instructions helped. Thank you for sharing!
